Best BBQ: Bayou on Bay

Alice Clark, the executive director of the Pickford Cinema, exclaims, “It is absolute torture to have my window two doors down from Bayou on Bay. It makes me hungry all day long!” She’s not alone. Bayou’s Brisket Slider, partnered with their apple coleslaw, won this year’s Bite of Bellingham cookoff. Wednesday nights will get you a half pound of tender pork ribs, dry rubbed and tinged with Uncle D’s savory sauce. You get two sides, and one should be red beans. Because owner Steve Crosier knows Bellingham, his ingredients are fresh and locally grown. Because he really, really knows Bellingham, the rib special even comes with a complimentary pint of (Boundary Bay) beer.
